'Tis the season to eat cookies!
Starlight, star bright, these holiday cookies are quite the sight!
Each year on December 1st, I put together a little Christmas cookie spread for my office/coworkers. I guess you could say it is my way of spreading the Christmas cheer. I have always been a huge fan of the lead up to Christmas day. Nevermind the gifts and the financial stress that goes along with it, but rather the fun traditions, friends and family gatherings, the holiday parties and of course my favourite, the holiday decorating! Although I am a lousy baker, I always become super inspired and motived to create a delicious variety of Christmas cookies to bake at the beginning of December. (After December 1st, you can forget about it lol) This year I was totally inspired by Miss Leah Bergman and her classic Linzer cookies recipe featured on her blog. (freutcake.com)
So I did what any non-baker would do, I called up the best baker I know, my Mother! With her excellent baking skills and her beautiful new kitchen, we whipped up a few dozen cookies, while sipping on eggnog and enjoying the background music of Mr. Bublé and his lovely Christmas tunes.
After only one mistake, The cookies turned out lovely! We used fresh raspberries and apple butter jelly to fill the center of the cookies. This added the perfect amount of sweetness, as well as adding a little touch of colour. Love that you can switch it up with whatever jelly you prefer!
